Tri Tip Reverse Sear

A little known secret and likely one of the “butcher’s cuts” would be this beautiful cut of meat.  It’s full of flavor, tender enough to be a crowd favorite, and super easy to slice thin for family and friends to grab off the cutting board.

Directions: 

  1. You’ll want to season it per usual, place in a cold cast-iron pan, and place in a 225 degree oven. 
  2. Start probing your meat after 30 minutes and bring your steak up to about 120 degrees…likely around 40-45 minutes depending on the oven. 
  3. Pull the cast-iron out of the oven and place on the stove-top burner on medium-high.  You’ll want to add a little bit of clarified butter, olive oil, tallow, or even some bacon fat to the pan and sear on both sides until you get that good dark color.  
  4. Let rest for 15 minutes, slice thin against the grain, and enjoy!
